Carrot and Blue Cheese Quiche
Ingredients:
SHORTCRUST PASTRY:
- 140 g all-purpose flour (0000)
- 85 g butter
- 5 tablespoons ice-cold water
- 1/2 teaspoon salt
Preparation:
- Make a crumbly mixture using your fingertips by mixing the flour, salt, and butter.
- Add the ice-cold water and form a dough ball.
- Transfer the dough to a work surface and proceed with fraisage: press the dough against the surface with the palm of your hand to fully integrate the butter with the flour.
- Form a ball again, wrap it in plastic wrap, and refrigerate for 2 hours.
- Roll out the dough and line a buttered tart pan (approximately 25 cm in diameter). Prick with a fork.
- Pre-bake in a preheated oven at 200ºC (390ºF) for 10 minutes.
CUSTARD MIXTURE:
- 6 eggs
- 100 g heavy cream
- Salt to taste
- Mix all ingredients together.
FILLING:
- 1 kg carrots
- Butter as needed
- A sprig of thyme
- Salt to taste
- Black pepper to taste
- Grated Parmesan cheese as needed
- 100 g blue cheese
- Peel and cut the carrots.
- In a pan, melt a piece of butter and sauté the carrots. Add the thyme sprig and salt, cover halfway with water, and cover with a lid. Cook over low heat.
- Once the carrots have softened but still hold their shape, remove the lid, increase the heat, and let the remaining water evaporate.
- Fill the pre-baked tart shell with the carrots, grated cheese, blue cheese chunks, and black pepper, then pour over the custard mixture.
- Bake at 200ºC (390ºF) for approximately 30 minutes.
